La Fée Absinthe Cookies

Ingredients

  • 4 & ½ Cups Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Cream of Tartar
  • 1 tsp. Salt
  • 1 Cup Butter
  • 1 Cup Confectioner’s Sugar
  • 1 Cup Granulated Sugar
  • 2 Eggs
  • 1 Cup Salad Oil
  • 1 tsp. Anise candy flavoring oil
  • ¼ tsp. Peppermint candy flavoring oil
  • 2 Tbsp. Fresh Lemon Juice
  • 2 Tbsp. La Fée Parisian Absinthe

Icing

  • 4 Cups Confectioner’s Sugar
  • ½ Cup Butter
  • 6 Tbsp. La Fée Parisian Absinthe
  • 6 drops Anise Oil
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp Water
  • 1 to 2 Drops Green food coloring.

Method

Cream butter and sugar in large mixing bowl. Beat in eggs until fluffy and add oil, absinthe, lemon juice and candy flavoring oils, blend well.

Combine flour, baking soda, cream of tartar and salt. Add dry ingredients to creamy mixture. Wrap and chill for several hours.

Preheat oven to 325 degrees F (163 degrees C). Roll dough into small balls and flatten on cookie sheet with the bottom of a drinking glass dipped in granulated sugar (to prevent sticking - if you use a LaFee absinthe glass, the eye logo will be visible on the baked cookies, if un-frosted). Bake 8-10 minutes. Serve as-is or Frost with LaFee Absinthe icing when cool & sprinkle with sugar crystals.
